Sourdough – Each of our Sourdough Pizzas started with just one bunch of grapes. Seriously! By allowing the grapes to ferment and carefully ‘feeding’ them high quality Italian 00 flour and water we were able to create a ‘Mother’ (also serious!). This is mixed into every batch of dough we make, ensuring that every hand-crafted Pizza has a unique, tasty crust.
All of our dough is made on site and left to rise for at least 24 hours, ensuring that you get a great looking cornicione (crust) covered in charred leopard spots that add even more flavour.
Without tomato sauce and cheese where would we be? (Well, you could be having a doughball starter!) Our juicy plum tomatoes and Fior di Latte Mozzarella are both imported from Italy, guaranteeing the best quality and taste, even on pizzas that appear simple.
We are proud to work with Moons Green Charcuterie, based in Wittersham, Kent. The free-range pork used at Moons Green is custom reared and all of their handmade meats have their own custom recipe.
